I have to say that comfort food for me takes different twists.  As a boy, my family lived in Bangkok, Thailand for a couple of years.  So Thai and southeast asian food is one of my comfort foods. 

I was really excited when I saw this post on The Runaway Spoon blog.  Here is a great and simple do-at-home pho recipe.  Pho is one of the national dishes of Vietnam.  It is, at it's basic level, a noodle soup.  But ahhh, the rich beef broth served steaming hot from the pot, the heavy dose of rice noodles, then all the add-ins.  Cilantro, Basil, Onions, Lime, Hoisin sauce, Hot sauce, peppers.  And of course the beef.  At a Pho restaurant the choices are long.  I prefer sliced sirloin, or brisket... AWESOME!

my mother would take a few pieces of chicken, some water, a touch of onion and garlic, and a decent amount of black pepper and simmer ittogether for hours. at the last minute, she'd add egg noodles and we'd pour the chicken and noodles over mashed potatoes.

chicken and noodles and mashed potatoes...the ultimate winter comfort food!

Now that's what I'm talking aobut.  Comfort food is the food you grew up with.  Especially the food made with love, and sometimes a big does of necessity.  Thanks for Sharing, Shelly.
